Molded Cookies

For the past couple of days I have been experimenting with cookies made in springerle molds.  I first discovered springerle molds in December when there was an article about them in a magazine.  As soon as I saw a picture of the molds, I knew immediately that I had to have some. 

With the holidays and working, I didn’t have time to do anything until a few weeks ago.  It was so hard narrowing down my choices.  Finally I decided on a large heart mold that I figured could be used for Valentines, a double rose, and a mold that had small little shells.

I tried two recipes yesterday.  The cookies looked gorgeous, but the taste was just not there.  Supposedly you can use the molds for shortbread, but  when I tried imy shortbread recipe today,the dough always fell apart when I tried to remove the cookie from the mold.  I was feeling pretty discouraged but decided to give one last try today and I made a cream cheese cookie dough.

Yes! I knew right away that this dough tasted good and was the right consistency.  And of course I had to add a little chocolate so you can see that the small shell cookies have a chocolate walnut filling.
